They fit Blue Alpine’s current large tray model. They do not fit trays shipped before December 2024. That’s the rule.

To work out which trays you have, find the order confirmation or invoice for your machine, plus any spare trays you bought later, and check the ship date. Silicone rubber stays flexible across a wide temperature range and food doesn’t bond to it the way it does to bare steel. That’s the main reason to use a mat at all.

What freeze dryer silicone mats do on a tray

Sticky, sugary foods are the obvious case. Fruit slices, purées and anything glazed can glue themselves to stainless as they dry. On silicone, you bow the mat a little and most pieces pop free. That means fewer broken pieces and far less scraping.

Not every food needs one. Firm, low-sugar foods like diced vegetables tend to come off bare stainless without much trouble, so you may only need the mats on fruit days.

Lay each mat flat with no folds or curled corners, since a lifted edge can catch when you slide the tray in. Spread food in a single layer and keep it off the very edge of the mat.

They work in the oven too

Because these freeze dryer silicone mats fit any 13 x 18 half-sheet and handle heat to 400 F, they double as baking mats. Cookies, roasted vegetables, anything that stays at or under 400 F. Don’t use them under a broiler.

Cleaning freeze dryer silicone mats

Put them in the dishwasher, or wash by hand with hot soapy water. Silicone can hold onto a thin oily film after fatty foods; a paste of baking soda and water, rubbed in and rinsed off, usually clears it.

Never cut food on a mat. A knife slice through silicone can’t be repaired, and it gives food a place to stick. Use a plastic or wooden spatula if you need to lift something stubborn.

Let them air-dry before you stack them, so water doesn’t sit trapped between layers. Store the mats flat or loosely rolled. Folding them hard leaves creases that don’t fully relax, and a creased mat won’t lie flat on the tray.

Buying a second set

Every Blue Alpine dryer comes with five trays and five mats. If you’ve added a spare set of trays so the next batch can wait in the freezer, a matching set of mats keeps both sets lined. Mats also wear eventually, especially once they’ve picked up a knife nick or two.
